Sustainable seafood is all the rage, and those of us who reside in landlocked states are learning to cook it properly in new and unique ways. Taku Kondo, who grew up in Japan where seafood is popular both raw in sushi and cooked in dozens of ways using all of the parts of different types of seafood, including roe, heads, skin, and even innards. He is a popular You Tuber and has compiled some of his popular recipes in his first cookbook, Coastal Harvest: Fish - Forage - Feast: A Cookbook .

The first chapter includes information on knife skills, storing fish, sushi, safely eating raw seafood, and other basic seafood information. The remaining chapters are divided into chapters according to the type of seafood. Each chapter is loaded with good information on different types of fish then is followed with comments at the beginning of each recipe that follows. The recipes are written in the traditional manner with the ingredients listed first, followed by step-by-step instructions that are succinct and easy to follow. The cookbook does call for ingredients that are generally available at Asian grocery stores. Most of the recipes are fairly simple, but there are a few which have longer lists of ingredients.

One of the best parts of this cookbook is that it includes beautiful, professional photographs that make the recipes very appealing. Even those who have access to seafood and cook it often will learn from this excellent book, and those of us who aren’t experts in seafood will learn much.
